Dense Bean Salad Recipe

It’s easy to make and is a reliable side dish for busy weeks, and it’s completely customizable. Learn about how we’ve been adding this flavorful and fiber-packed salad onto our plates for the past couple of years. 

What is dense bean salad?

Bean salads aren’t new and have been around for hundreds of years; for example, balela salad is made with spiced chickpeas tossed with fresh herbs and vinaigrette dressing and comes from Egyptian and Middle Eastern culinary history. But beans haven’t always had the right marketing. The term “dense” bean salad was termed and popularized by TikToker Violet Witchel in 2023 and, since then, has influenced many people to increase their fiber and protein intake each week. 

I’m not much of a bean-lover, but making the dense bean salad for the past couple of years has changed the way I eat. In short, a dense bean salad is a mixture of your favorite beans, chopped vegetables, other proteins like cheese or meat, and a flavorful dressing. 

The beauty of this dish is that you can prepare it ahead of time for 3-4 days, customize it to your taste preferences, and eat it cold straight from the fridge. During busy weeks, dense bean salads have helped feed our family. Depending on what you add to your dense bean salad, it can be a good source of protein (beans or lean meats), fiber (beans, cabbage), and other health benefits. 

Choosing ingredients for this salad

Lead with the rainbow. It can be quite confusing to figure out what to make for a dense bean salad because there are so many choices. A dense bean salad is simply a bowl of cooked beans, chopped vegetables (or fruits), and a dressing. There are obviously other add-ins, like proteins (cooked chicken), cheese, and toppings like nuts or fried aromatics. 

It’s best to pick vegetables you already like eating. Here is a list to help you pick out potential combinations, with suggestions on how much to add to each salad. 

Beans (pick 1-2): 

  • Navy beans 
  • Garbanzo beans
  • Pinto beans
  • Black beans
  • Great Northern beans 
  • Cannellini beans 
  • Edamame 

Other proteins (optional, pick 1):

  • Boiled eggs
  • Grilled meat (chicken, steak, turkey)
  • Plant-based proteins 
  • Tempeh
  • Tofu

Vegetables and fruit (pick 3-5):

  • Carrots 
  • Corn 
  • Peas or snap peas
  • Green beans
  • Roasted kabocha 
  • Tomatoes

  • Nuts (pine nuts, peanuts, cashews, walnuts)
  • Seeds (sunflower seeds, pumpkin seeds, sesame seeds)

Dressing options 

The dressing for dense bean salad helps change up the salad so you get variety, especially if you’re eating this weekly. Different dressings can change the same exact dense bean salad ingredients entirely. Here are some favorite dressings we use at home: 

  • Tomato vinaigrette: balsamic vinegar, olive oil, tomato, Dijon, pepper, salt, honey 
  • Pesto dressing: basil, pine nuts, parmesan cheese, olive oil, lemon juice, garlic
  • Asian-inspired dressing: chili crunch, soy sauce, oyster sauce, black vinegar, rice vinegar, honey, roasted sesame oil, avocado oil 
  • Caesar-inspired dressing: Greek yogurt, anchovies or fish sauce, lemon, garlic, salt, pepper, dill, dried oregano 

Tips for making dense bean salad 

Here are some tips we’ve learned from making this salad so often:

  • If you are cooking dry beans instead of using canned, soak them overnight to make cooking easier. 
  • Use the leftovers you have at home. Dense bean salad can easily be a clean-out-the-fridge recipe. Alternatively, don’t be afraid to use canned beans or frozen vegetables (peas, carrots, green beans). Sometimes cutting time in the recipe is worth it! 
  • Salt your produce to remove excess water and season thoroughly, like tomatoes and cucumbers. 
  • Blanch some of the more fibrous or cruciferous vegetables, like broccoli or green beans, to make the eating experience more pleasant. Sometimes raw vegetables can be harder to chew, so blanching helps to keep produce al dente and edible. 
  • Dense bean salad is actually better after sitting in the fridge for a couple of hours, letting the vegetables soak up the dressing. 

How to serve dense bean salad

Dense bean salad can be served immediately after mixing, but we think it’s best chilled in the refrigerator for a couple of hours to let the dressing season the vegetables. We use dense bean salad as a side dish for our main meals, and it’s our main vegetable for most meals. Sometimes, if we’re super hungry and can’t wait for a full meal, we eat a cup as a snack, and it’s refreshing and filling without being too heavy. 

Making ahead & storage

Store your dense bean salad in an airtight container in the refrigerator for up to 3-4 days. Right before serving, mix the salad thoroughly to bring up any dressing that settles at the bottom of the container.

Ingredients

Beans (raw, skip if using canned beans)

  • 1 c dried beans
  • 4 c water for soaking
  • 6 c filtered water for cooking

Tomato vinairgrette dressing (makes ¼ cup)

  • 1 ½ tbsp olive oil
  • ¼ c chopped tomato
  • ½ garlic clove
  • ½ tbsp lemon juice
  • 1 tsp balsamic vinegar
  • ½ tsp kosher salt
  • ¼ tsp Dijon mustard
  • ¼ tsp honey

Salad

  • 1 c quartered cherry tomatoes
  • 1 c diced cucumber
  • ¼ tsp kosher salt
  • 1 c green beans blanched and chopped
  • water for blanching and ice bath
  • ice
  • 2 c beans cooked
  • 1 c corn kernels cooked
  • 1 c diced red onion

Toppings (optional)

  • fried onion shallot, or garlic slices
  • roasted cashews or other nuts you prefer

Equipment Used

  • measuring cups and spoons

  • 1 large mixing bowl for assembly
  • 1 small bowl for dressing
  • 1 medium bowl for soaking beans if necessary
  • 1 medium bowl for ice bath if necessary

Instructions 

Beans (raw, skip if you are using canned beans)

  • Soak 1 c dried beans for at least 5 hours in 4 c water, no more than overnight.

  • Strain the beans and rinse with water.

  • In a heavy-bottomed pot, combine beans and 6 c filtered water over medium-high heat until it simmers. Add the lid and lower to low heat. Cook until the beans are soft but al dente, about 45 minutes.

  • Strain the beans, rinse with cold water, and set aside.

Tomato vinaigrette dressing

  • Add all the ingredients (1 ½ tbsp olive oil, ¼ c chopped tomato, ½ garlic clove, ½ tbsp lemon juice, 1 tsp balsamic vinegar, ½ tsp kosher salt, ¼ tsp Dijon mustard, and ¼ tsp honey) to a blender or to a cup if you’re using an immersion blender. Blend until fully combined.

  • Taste and adjust seasonings as needed. Set aside until dressing the salad.

Salad

  • Chop 1 c quartered cherry tomatoes and 1 c diced cucumber into quarters and lay them onto a towel. Sprinkle with ¼ tsp kosher salt and let sit for 10 minutes. Then, use a towel to dab off the excess liquid and transfer the tomatoes and cucumbers to a serving bowl.

  • In a small pot over medium-high heat, add water. When it boils, gently add the 1 c green beans. Cook until al dente, about 2 minutes. Transfer immediately into an ice bath until beans are chilled. Drain the beans and cut into ½-inch pieces. Transfer to serving bowl.

  • Add all the veggies into a bowl: 1 c quartered cherry tomatoes, 1 c diced cucumber, cooked 2 c beans, 1 c diced red onion, and 1 c corn kernels into the same serving bowl.

  • Gently mix together the salad ingredients in the bowl.

  • Add the dressing and mix again.

  • Serve immediately or keep in an airtight container to chill in the refrigerator to let the flavors marinate. Add any toppings for extra crunch, like fried onion or roasted cashews.
