Hands down, Filipino food is one of the most diverse cuisines. Don’t be fooled by the mainstream, monotonous take on lumpia and ube being the two heralded foods of the Philippines. This Southeast Asian archipelago is made up of over 7,000 islands and over 180 distinct languages, and this variety (along with a very colorful, rich history) helps create a country full of diverse flavors and foods to satisfy any hungry belly.
In the central Visayan region, you’ll find aromatic and savory cebuchon (roasted pork belly). Or in Luzon (the northern area), enjoy tangy, hot sinigang stew made with tamarind and meaty broth. When I miss home, I’m quick to make some of these Filipino staples that always hit the spot.
