Sunomono Salad Recipe (Japanese Cucumber Salad)

Ingredients

  • 2-3 Japanese cucumbers or 4 Persian cucumbers
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/4 tsp salt
  • 1/4 tsp soy sauce
  • 1 tsp sesame seeds

Instructions

  • Slice cucumbers thin
  • Sprinkle with salt, wait 5 minutes, then squeeze cucumbers to remove water (don't be afraid!)
  • Mix rice vinegar, sugar, soy sauce until dissolved, then add to cucumbers.
  • Sprinkle with sesame seeds
