Read below for tips on recreating Starbucks’ sous vide egg bites without needing an expensive machine and saving time with a faster method to cook them, too.
Starbucks egg white bites
Since its release date in 2017, Starbucks egg bites have been a popular menu item. I’ve spent a pretty penny on buying them when I’m on the go and need a quick breakfast to fuel me up. They’re now sold at Costco in premade packs, but they’re still a little expensive ($1.70 per egg bite) for a dish that’s so easy to make at home. With all organic ingredients, you can make egg white bites at home for $1 each or even less.
Luckily for me, Starbucks’ website includes a detailed ingredients list for egg white bites, which I used to create my own egg white bites at home. These original bites are made in the sous vide, but I found that making them in the oven with a water bath was easier and took less time, with great results.
Ingredients in this egg white bites copycat recipe
The best part about making egg white bites at home is that you can customize the ingredients. Original Starbucks egg white bites include preservatives, which I try not to consume, so I prefer cooking at home whenever I can. My version of these egg bites only has these ingredients:
- egg whites
- Monterey jack
- low-fat cottage cheese
- onion powder
- garlic powder
- kosher salt
- black pepper
- spinach
- bell pepper
To make your life easier, buy the boxed egg whites from the grocery store so you don’t have to crack open a bunch of eggs and have leftover egg yolks.
Cups or molds bake egg bites
I have tested various methods of making egg bites in the oven, steamer basket over the stove, and even in a sous vide machine. After testing different ways to cook egg white bites at home, I believe the best and easiest way to make them is with individual silicone muffin cups on a sheet pan with a water bath in the oven.
I first used metal cupcake pans with paper cupcake liners, which were too wet after baking. Cooking them straight in the metal pan with oil also cooked them too fast and was hard to remove. Individual silicone cups made it easy to remove, and they didn’t need added oil to remove the egg white bites after baking.
How many days do egg white bites last in the fridge?
Egg white bites can be made at the beginning of the week for meal prep and can last up to three days in the fridge in an air-tight container. You can reheat the egg white bites in the microwave for about 25-30 seconds per egg bite.
Are Starbucks egg white bites healthy?
The original Starbucks egg whites also contain preservatives, so if you’re trying to avoid these ingredients, it’s best to make them yourself at home. While Starbucks egg white bites are lower in cholesterol because they don’t include egg yolks like the Starbucks egg bites with bacon and gruyere, we prefer making them at home because you can control the ingredients.
These homemade, copycat Starbucks egg white bites are full of protein without the added fat of the egg yolk. They also contain low-fat cottage cheese for an extra protein boost.

Starbucks Egg White Bites Copycat Recipe
Ingredients
- 1 c egg whites about 8 large eggs
- 4 oz Monterey jack cheese cut into cubes
- ½ c low-fat cottage cheese
- ÂĽ tsp onion powder
- ÂĽ tsp garlic powder
- ÂĽ tsp kosher salt Diamond Crystal brand
- ÂĽ tsp black pepper
- â…“ c diced spinach
- 3 tbsp diced bell pepper
- warm water for water bath
Equipment Used
- measuring cups and spoons
- knife and cutting board
- blender
- oven
- sheet pan
- chopstick
Instructions
- Preheat the oven to 325 °F.
- In a blender, combine the 1 c egg whites, 4 oz Monterey jack cheese, ½ c low-fat cottage cheese, ¼ tsp onion powder, ¼ tsp garlic powder, ¼ tsp kosher salt, and ¼ tsp black pepper. Blend until smooth.
- Pour the batter into silicone cups on a sheet pan.
- Carefully add the â…“ c diced spinach and 3 tbsp diced bell pepper on top of each cup. Use a chopstick or spoon to gently mix the toppings with the batter, but be careful not to dunk the toppings completely into the batter. You want to have some toppings peek out the top for visual appeal.
- Place the sheet pan and silicone cups into the middle rack of the oven.
- Add half an inch of warm water into the sheet pan.
- Bake for 15-20 minutes, or until the cups are firm, and lightly browned on the edges.
- Remove from the oven and place them on a cooling rack.
- Gently remove the egg white bites from the silicone cups and serve.
